Deep-Fried Hot Chocolate Cupcakes

For Bo's birthday.



We made the cupcakes the day before using a regular mix and adding cinnamon, cloves, ginger, and cayenne pepper (you know, cos it's "hot" chocolate).



We dunked the cupcakes in buttermilk (or chocolate pudding for a few) then dredged them in tempura mix with cocoa, cinnamon and cayenne.























Then the nomming commenced. And it was good.

Chiba was pouting over not getting any cupcakes, so we gave her a hat. She's quite fashionable, and may actually end up as our weekend blogger.




We borrowed the fryer from Bo and only had it for the weekend, so we made the best of it with beignets for breakfast the next morning.

This made me want to invest in a fryer, but it's probably for the best if I don't.
